Mexican Meatball Soup

Definitely a favorite. Another soup from Rosie’s Ice Cream Parlor in Dunsmuir. 1990

Ingredients

  • Meatballs
  • 1 lb. ground beef
  • 1/4 c. uncooked rice (not minute rice)
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1/4 tsp. oregano
  • 1 clove garlic chopped
  • 1 egg beaten
  • Mix together, form 1/2 in. meatballs, brown and drain.
  • Soup
  • 1/2 c. chopped onion
  • 1/2 c. celery
  • 2 cloves garlic minced
  • 4 c. beef broth
  • 1 8oz. tomato sauce
  • 1/4 tsp oregano
  • 1 16 oz. can tomatoes
  • 1 medium bell pepper ( i like red)
  • 1 c. frozen corn ( i use closer to 2)
  • 1 c. zucchini

Directions

  1. Put all ingredients into crockpot and cook overnight.
