Mexican Meatball Soup

Definitely a favorite. Another soup from Rosie’s Ice Cream Parlor in Dunsmuir. 1990

Ingredients
- Meatballs
- 1 lb. ground beef
- 1/4 c. uncooked rice (not minute rice)
- 2 tsp. chili powder
- 1 tsp. salt
- 1/4 tsp. oregano
- 1 clove garlic chopped
- 1 egg beaten
- Mix together, form 1/2 in. meatballs, brown and drain.
- Soup
- 1/2 c. chopped onion
- 1/2 c. celery
- 2 cloves garlic minced
- 4 c. beef broth
- 1 8oz. tomato sauce
- 1/4 tsp oregano
- 1 16 oz. can tomatoes
- 1 medium bell pepper ( i like red)
- 1 c. frozen corn ( i use closer to 2)
- 1 c. zucchini
Directions

Put all ingredients into crockpot and cook overnight.
