Cheesy Meat Muffins

One of my family’s favorites! If your kids have an aversion to the word “meatloaf” tell them they are inside out cheeseburgers!
Prep time: 15 minutes
Cook time: 25 minutes
Serves 4 people

Ingredients
- 1 lb. ground beef, extra lean
- 2 eggs, beaten
- 2 cloves garlic, smashed
- 1/2 cup ketchup
- 1/4 cup bbq sauce
- 4 tsp. yellow mustard
- 1 cup breadcrumbs
- 12 oz. cheddar cheese, cubed into 1 oz. pieces
Directions

at oven to 375.

Mix all wet ingredients with ground beef (I use my hands, it works best.)

Once mixed well add breadcrumbs and continue to mix with hands.

I line my muffin tins with the foil muffin liner cups that Reynolds makes.

Fill muffins cups halfway with meat mixture.

Place cheese cube into center of each muffin.

Cover cheese cube with other half of meat mixture, being sure to cover all of cheese.

Bake for 20 minutes.

Remove from oven and mix a small batch of ketchup, bbq & small amount of mustard to place on top of muffins.

Once sauced placed back in oven for another 5 minutes.
