Zucchini bread

Ingredients

  • 1 1⁄2 cups flour
  • 1 tsp. cinnamon
  • 1⁄2 tsp. baking soda
  • 1⁄2 tsp. salt
  • 1⁄4 tsp. baking powder
  • 1⁄4 tsp. nutmeg
  • 1 egg beaten
  • 1 cup sugar
  • 1 cup zucchini shredded
  • 1⁄4 cup oil
  • 1⁄2 cup walnuts or pecans toasted

Directions

  1. Grease a loaf pan and set aside.

  2. Combine dry ingredients in a bowl, make a well in the middle, set aside.

  3. Combine all the rest and add all at once to dry ingredients.

  4. Stir until just moistened; batter should be lumpy. Add nuts. Spoon into loaf pan.

  5. Bake at 350 F for 50-55 minutes. Cool on a wire rack for 10 minutes, then remove from pan and continue to cool on wire rack.
