Bran Muffins

Ingredients

  • 6 c bran cereal
  • 2 c water, boiling
  • 1 c shortening
  • 3 c white sugar
  • 4 eggs
  • 4 c buttermilk
  • 5 c all-purpose flour
  • 5 tsp baking soda
  • 1 1/2 tsp salt

Directions

  1. Mix cereal and boiling water in a metal bowl and allow to cool.

  2. Cream shortening, sugar, and eggs in a large bowl. Add buttermilk and cereal mixture. Combine flour, baking soda, and salt; stir into creamed mixture until flour is moistened. Batter should be lumpy.

  3. Spoon batter into muffin tins. Bake at 375 degrees for 15 minutes.
