Carrot Cake

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup vegetable oil
  • 1 1/2 cup sugar
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup walnut, coarsely chopped

Directions

  1. Preheat oven to 325 degrees
  2. Oil and line two 9 inch round cake pans
  3. Sift together flour, baking powder, baking soda, salt, and cinnamon
  4. Take 2/3 of the sugar, add gradually to the oil, beating well after each addition
  5. Beat eggs until light, add remaining sugar
  6. Slowly add egg mixture to oil mixture, continue beating until the mixture is smooth and fluffy
  7. Gradually stir in sifted dry ingredients until well combined
  8. Add carrots and nuts. Mix well.
  9. Pour into prepared pans and back 60-65 minutes, until cake is golden brown.
