Chicken Marengo (Pollo Alla Marengo)

Ingredients
- 1 frying chicken, 4 pounds, cut into serving pieces
- 1/4 cup olive oil
- 5 Tablespoons butter
- 1/3 teaspoon nutmeg
- 1 Tablespoon flour
- 2/3 cup dry white wine
- Juice of one lemon
- 1/3 cup parsley
- 1 lemon
- Salt and pepper
Directions

Wash and dry chicken well: Place oil and butter in pot.

Add chicken, nutmeg, salt and pepper. Simmer covered for 25 minutes.

Remove chicken and add flour, lemon juice and wine to pot, blending carefully.

Return chicken to pot and cook slowly for ten minutes, stirring constantly.

Place chicken on serving platter. Sprinkle with the juice of one lemon and garnish with parsley. Serve gravy separately.
