Mandarin Orange Almond Salad with Balsamic Vinegarette

The best and easiest balsamic dressing I’ve had. Don’t use olive oil for this as it ruins the flavor.

Cook time: 10 minutes
Serves 6 people

Ingredients
- 1 C. canola oil
- 1/2 C. balsamic vinegar
- 3 T. sugar
- 1 t. salt
- 1/8 t. pepper
- 1/2 C. sliced almonds
- 2 T. sugar
- 1/2 head Red lettuce
- 1/2 head Romaine
- 1 bunch scallions, chopped
- 1 can mandarin oranges, drained

Mix oil, balsamic vinegar, sugar, salt and pepper in a jar and refrigerate for several hours.

Mix almonds and sugar together over medium heat in heavy pan, stirring constantly until the almonds are coated and sugar is dissolved. Watch for tendency to burn. Spread out and break apart on foil to cool.

Toss salad and dressing. Add almonds just before serving.
