Chicken and Rice Casserole

This is a yummy casserole – one I have made several times to take to sick friends.

Ingredients
- 3/4 C. long-grain and wild rice
- 2 T. butter
- 6 oz. mushrooms, sliced
- 1 medium onion, diced
- 3 cups diced cooked chicken
- 1 12 oz. bag frozen green beans, partially cooked
- 1 can water chestnuts, drained and chopped
- 1 small jar diced pimentos
- 1 can cream of mushroom soup
- 1 cup mayonnaise
- 1 cup grated sharp Cheddar
- Salt & pepper to taste

Preheat oven to 350°. Spray casserole dish with cooking spray. Cook rice according to package directions

Heat butter in a skillet over medium heat. Add mushrooms and onions and sauté until tender.

Transfer to a large bowl; add all other ingredients and mix well. Pour into prepared casserole dish. Bake for 20 to 25 minutes or until bubbly.
