Chicken and Rice Casserole

This is a yummy casserole – one I have made several times to take to sick friends.

Serves 6 people

Ingredients

  • 3/4 C. long-grain and wild rice
  • 2 T. butter
  • 6 oz. mushrooms, sliced
  • 1 medium onion, diced
  • 3 cups diced cooked chicken
  • 1 12 oz. bag frozen green beans, partially cooked
  • 1 can water chestnuts, drained and chopped
  • 1 small jar diced pimentos
  • 1 can cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup grated sharp Cheddar
  • Salt & pepper to taste

Directions

  1. Preheat oven to 350°. Spray casserole dish with cooking spray. Cook rice according to package directions

  2. Heat butter in a skillet over medium heat. Add mushrooms and onions and sauté until tender.

  3. Transfer to a large bowl; add all other ingredients and mix well. Pour into prepared casserole dish. Bake for 20 to 25 minutes or until bubbly.
