Union Station Chicken Piccata

This was from an old St. Paul restaurant that went out of business years ago.

Serves 4 people

Ingredients

  • 4 chicken breasts
  • 1/2 C. flour
  • Salt and pepper
  • Olive oil
  • 1 jar marinated artichokes, drained
  • 1/4 C. capers, drained
  • 1/4 C. white wine
  • 1 lemon, quartered
  • Minced parsley

Directions

  1. Preheat oven to 375 degrees.

  2. Lightly pound chicken breasts and coat with flour, salt and pepper. Heat olive oil over medium-high heat in skillet. Sauté chicken breasts on both sides until golden brown. Transfer chicken to baking pan, unless skillet is oven safe; add artichoke hearts, capers and wine to pan. Squeeze lemon wedges over browned chicken and add squeezed lemon to the pan.

  3. Cover and bake 20 minutes, or until juices run clear. Serve chicken under capers and artichoke hearts. Garnish with minced parsley
