Lemon Cream Torte

I’ve had this recipe for close to 40 years. It’s a refreshing dessert for summer.
These days this recipe is also known by many other names, including “Better Than Robert Redford” when made with chocolate pudding.

Ingredients
- 1 1/2 C. flour
- 1 stick butter
- 1 c. ground nuts
- Dash salt
- 8 oz. cream cheese, room temperature
- 1 C. powdered sugar
- 8 oz. Cool Whip, divided
- 3 pkgs. instant lemon pudding
- 4 C. milk
Directions

Preheat oven to 300°.

Crust: Mix flour, butter, nuts & salt to make crust. Press in 9×12 pan. Bake for 12 minutes.

Cream Filling: Cream the cream cheese, powdered sugar; add half of the Cool Whip and mix. Spread on cooled crust.

Pudding filling: Mix pudding & milk until thick (approx. 5 min.) Pour over cream cheese layer. Chill several hours.

Topping: Spread remaining half of Cool Whip on top & serve.
