Lemon Cream Torte

I’ve had this recipe for close to 40 years. It’s a refreshing dessert for summer.
These days this recipe is also known by many other names, including “Better Than Robert Redford” when made with chocolate pudding.

Ingredients

  • 1 1/2 C. flour
  • 1 stick butter
  • 1 c. ground nuts
  • Dash salt
  • 8 oz. cream cheese, room temperature
  • 1 C. powdered sugar
  • 8 oz. Cool Whip, divided
  • 3 pkgs. instant lemon pudding
  • 4 C. milk

Directions

  1. Preheat oven to 300°.

  2. Crust: Mix flour, butter, nuts & salt to make crust. Press in 9×12 pan. Bake for 12 minutes.

  3. Cream Filling: Cream the cream cheese, powdered sugar; add half of the Cool Whip and mix. Spread on cooled crust.

  4. Pudding filling: Mix pudding & milk until thick (approx. 5 min.) Pour over cream cheese layer. Chill several hours.

  5. Topping: Spread remaining half of Cool Whip on top & serve.
