Yankee Salad

A good salad for groups; divide in half for normal use.

Ingredients

  • 1 lb orzo
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 2 T. flour
  • 1 t. salt
  • 2-20 oz cans crushed pineapple, drained with juice reserved
  • 1-12 oz. can mandarin orange segments, drained
  • 1-10 oz jars maraschino cherries, drained and chopped
  • 1-12 oz container frozen whipped topping, thawed

Directions

  1. Cook pasta per instructions, rinse under cold water and drain.

  2. In a saucepan, combine the sugar, eggs, flour, salt and pineapple juice; cook over medium heat until mixture thickens. Remove from heat and cool.

  3. Toss together the pasta and sugar/egg/pineapple juice mixture. Refrigerate overnight.

  4. Break up chilled pasta with a spoon and mix in crushed pineapple, mandarin oranges and cherries. Fold in whipped topping. Chill before serving.
