(from SallyV’s recipe box)
This recipe has been adapted to be vegetarian. My grandmother always made these when we had Thanksgiving/Christmas dinner at her house.

Ingredients
- 3 lb. red potatoes
- 4 T. butter
- 1 C. onion, chopped
- 4 T. flour
- 4 T. sugar
- 4 t. salt
- 1 t. celery seed
- 1/2 pepper
- 11/2 C. water
- 1/2 C. white vinegar
Directions
-
Place potatoes in saucepan; add enough water just to cover. Heat to boiling; cover and reduce heat to low. Cook 30 to 35 minutes or until potatoes are tender; drain. Let stand until cool enough to handle. Peel potatoes and cut into 1/4-inch dice.
-
In a skillet, melt butter over medium heat and cook onion until tender. Stir in flour, sugar, salt, celery seed and pepper. Cook over low heat, stirring constantly, until mixture is bubbly.
-
Stir water and vinegar into onion mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. (Taste to see if there is enough vinegar…I like it extra tangy.) Stir in potatoes. Heat over medium, stirring gently to coat potatoes, until hot and bubbly.
