Roasted Asparagus Wrapped in Prosciutto

Ingredients

  • 1 bunch of asparagus
  • spray oil
  • salt
  • pepper
  • paper thin prosciutto
  • 1 round Boursin cheese

Directions

  1. at oven to 450.

  2. Spread trimmed asparagus on a baking sheet.

  3. Spray with oil.

  4. Sprinkle with salt and papper.

  5. Roast for 10-15 minutes until bright green or al dente. Do not overcook.

  6. Let cool completely.

  7. Spread a small amount of boursin cheese on a slice of paper thin prosciutto and wrap around asparagus.

  8. Layer in a serving dish and serve at room temperature.

  9. You can make a day ahead and keep refrigerated.
