Crockpot Chicken Stew

Ingredients
- 1 lb. chicken, cut in 1” cubes and sautéed
- 1 large onion, diced
- 4 carrots, sliced
- 4 potatoes, pealed & cut into cubes
- 8 oz mushrooms, cleaned and halved
- 1 32 oz. chicken stock
- 1 28 oz. diced tomatoes
- 1 t celery seed
- 1 t dry thyme
- Salt & pepper to taste
- 1 cup frozen peas (added last 30 minutes)
- 2 T. butter
- 3 T. flour
- 2 C. cooking liquid
- Cooked egg noodles
Directions

Place all ingredients in crockpot except peas. Cook on low for 8 hours or high for 4 hours. Add peas 30 minutes prior to end of cooking.

Make a roué with the butter, flour and cooking liquid; stir into stew to thicken.

Serve with cooked egg noodles. Don’t cook noodles in crockpot; they will get mushy.
