Pasta Fagioli

Ingredients

  • 1 onion, chopped
  • 1 garlic clove, minced
  • 3-4 stalks celery, chopped
  • 3-4 carrots, chopped
  • 8 large Italian hot sausage, cooked and chopped
  • 1 1/2 tsp dried oregano
  • 1 Tbsp dried basil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • olive oil to saute vegetables
  • 6 or more cans of chicken broth
  • 2 large cans chopped tomatoes, with juice
  • 1 can pinto beans, undrained
  • 2 cups penne pasta, uncooked
  • parmesan for topping

Directions

  1. Saute vegetables and spices in olive oil until tender.

  2. Cook and chop sausages and add to vegetable spice mixture.

  3. Add tomatoes, beans and broth; bring to a boil.

  4. Add pasta and cook until tender.

  5. Serve with parmesan.
