Ingredients
- 1 onion, chopped
- 1 garlic clove, minced
- 3-4 stalks celery, chopped
- 3-4 carrots, chopped
- 8 large Italian hot sausage, cooked and chopped
- 1 1/2 tsp dried oregano
- 1 Tbsp dried basil
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp chili powder
- 1/4 tsp cumin
- olive oil to saute vegetables
- 6 or more cans of chicken broth
- 2 large cans chopped tomatoes, with juice
- 1 can pinto beans, undrained
- 2 cups penne pasta, uncooked
- parmesan for topping
Directions

Saute vegetables and spices in olive oil until tender.

Cook and chop sausages and add to vegetable spice mixture.

Add tomatoes, beans and broth; bring to a boil.

Add pasta and cook until tender.

Serve with parmesan.
