Chicken Stew

Ingredients

  • 4 chicken breasts
  • 2 bay leaves
  • 1 can crushed tomatoes, large
  • 1 onion
  • 4-6 potatoes
  • 1-2 bags carrots
  • 1 bag frozen mixed vegetables
  • 1 can shoe-peg corn

Directions

  1. Boil chicken with bay leaves until tender; cool and drain, but save the water. Shred.

  2. To the water, add tomatoes, onion, potatoes and carrots (cut into chunks); add chicken and vegies. Cover and simmer till heated through.
