Oven Baked Beef Stew

Ingredients

  • 3 Tbsp oil
  • 2 lb. beef stew meat, cut in cubes
  • 1/3 cup flour or 1/4 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 16-oz can tomatoes, undrained (or stewed)
  • 10 1/2 oz. can beef broth
  • 2 cups potatoes, cubed
  • 1 cup celery, diced
  • 4 carrots, sliced
  • 1 onion, quartered
  • 1 bay leaf

Directions

  1. at oven to 325.

  2. Heat oil in dutch oven over medium heat. Brown beef cubes in oil. Add flour, salt, pepper, garlic powder. Stir in tomatoes and beef broth; mix well. Bring to a boil, stirring often. Add remaining ingredients; mix well. Cover.

  3. Bake 2 hours or until meat is tender, stirring a few times during baking. Remove bay leaf.
