Jamaican-style Chicken Fricassee

Ingredients

  • 2 3-lb whole chickens, cut up
  • (or whatever chicken pieces you like!)
  • 4 onions, thinly sliced
  • 4 garlic cloves, minced
  • 4 tomatoes, chopped
  • 2 limes, squeezed and added
  • 1 1/2 scotch bonnet peppers, 1 whole pepper added to dish, 1/2 seeded, sliced
  • 1 tsp salt
  • 1/2 tsp pepper
  • thyme
  • oil for browning
  • 2 cups chicken broth or water

Directions

  1. Mix all together to marinate the chicken. Cover and refrigerate for 15 minutes to an hour.

  2. Shake off onion and put chicken on cookie sheet. Season meat with salt and pepper. Place in skillet with oil to brown in batches.

  3. Remove chicken; to same pan add vegetables, excluding limes. Return meat to pan and let simmer 40-45 min. covered. Remove whole pepper before serving!

  4. Serve over rice (3 cups water, 2 cups rice 1 1/2 tsp salt; bring to boil, then simmer for 20 min. covered).
