Ingredients
- 6 c fish stock or water
- 1 sm white onion, unpeeled
- 2 garlic cloves, unpeeled
- 3 bay leaves
- 10-12 peppercorns
- 1 1/2 tsp salt
- 1 lb medium shrimp, in the shell
- 3 tbsp olive oil
- pepper
- 1 fresh bulb onion or medium red onion, sliced in thin half moons
- 3 jalapenso finely julienned
- 1 ripe avocado, finely diced
- 10 cilantro sprigs
Directions

Place stock or water, onion, garlic, bay leaves, pepper, and salt in meium pan.

Bring to a boil over high heat and cook, uncovered for 10 min. to infuse the flavors.

Add the shrimp and cook, uncovered, for about 2 minutes, or until the shrimp are cooked.

Drain, rinse in cool water, peel and cut in half.

Combine the lime juice and oil with pepper and about 1/2 tsp salt.

Place the shrimp in a large bowl with the onion, chiles, avocado, and cilantro.

Pour the lime juice dressing over the salad and toss to distribute evenly.
