Ensalada de Camarones

Serves 6 people

Ingredients

  • 6 c fish stock or water
  • 1 sm white onion, unpeeled
  • 2 garlic cloves, unpeeled
  • 3 bay leaves
  • 10-12 peppercorns
  • 1 1/2 tsp salt
  • 1 lb medium shrimp, in the shell
  • 3 tbsp olive oil
  • pepper
  • 1 fresh bulb onion or medium red onion, sliced in thin half moons
  • 3 jalapenso finely julienned
  • 1 ripe avocado, finely diced
  • 10 cilantro sprigs

Directions

  1. Place stock or water, onion, garlic, bay leaves, pepper, and salt in meium pan.

  2. Bring to a boil over high heat and cook, uncovered for 10 min. to infuse the flavors.

  3. Add the shrimp and cook, uncovered, for about 2 minutes, or until the shrimp are cooked.

  4. Drain, rinse in cool water, peel and cut in half.

  5. Combine the lime juice and oil with pepper and about 1/2 tsp salt.

  6. Place the shrimp in a large bowl with the onion, chiles, avocado, and cilantro.

  7. Pour the lime juice dressing over the salad and toss to distribute evenly.

  8. Serve.
