Ingredients
- 3 tbsp oil
- 1 small white onion, finely chopped
- 1 garlic clove, minced
- 1 1/2 c pork, cooked and shredded
- 1 medium ripe tomato, peeled, seeded, and finely chopped
- 1/2 ripe plantain, peeled and finely diced
- 2 tbsp dark raisins, chopped
- 1 tbsp capers, chopped
- 1/2 tsp dried thyme, crumbled
- 1/2 tsp dried oregano, crumbled
- salt and pepper
Directions

Heat the oil over medium heat.

Add the onion and garlic and cook until the onion is translucent, 3 minutes.

Reduce the heat and add the meat, and stir well.

Stir in the tomato, plantain, raisins, capers, and dried herbs.

Cook for 10 minutes.

Adjust the seasoning.

Let cool.
