Prosciutto Wrapped Roasted Asparagus Bundles

Serves 8 people

Ingredients

  • 2 lbs fresh asparagus
  • 2 T melted butter
  • 1 T extra-virgin olive oil
  • 1 t lemon juice
  • 3/4 t salt
  • 1/8 t freshly gound pepper
  • 1 c fontina cheese, grated
  • 8 slices (1/4 lb) prosciutto

Directions

  1. Preheat oven to 450

  2. Trim asparagus

  3. Place on a sheet tray and toss with the melted butter, olive oil, lemon juice, salt and pepper.

  4. Spread evenlyin one layer.

  5. Roast until tender, about 10 minutes, stirring once with tongs to ensure they cook evenly.

  6. Remove from teh oven and let cool slightly.

  7. Turn the oven to broil.

  8. Lay a slice od prociutto horizontally on work surface. Put 4 stalks of asparagus, vertically, on top.

  9. Sprinkle 2 T grated cheese on asparagus.

  10. Wrap the prosciutto around the Fontina.

  11. Place bundles on a sheet pan and brush with olive oil.

  12. Broil 3-5 minutes until cheese is melted. Serve immediately.
