Chicken Noodle Casserole

Ingredients

  • 8 oz. egg noodles, uncooked
  • 1/2 C. butter
  • 1 C. sliced mushrooms
  • 1 small onion, finely diced
  • 1/3 C. flour
  • 2 C. chicken broth
  • 1 C. milk
  • 2 oz. jar diced pimiento
  • 2 t. salt
  • 1/2 t. pepper
  • 2 C. cooked diced chicken
  • 1/3 C. grated Parmesan

Directions

  1. Preheat oven to 350°. Spray 2 qt. baking dish with cooking spray.

  2. Cook noodles to al dente and drain.

  3. In large skillet, melt butter over medium heat; sauté mushrooms, onion, salt and pepper. Whisk in flour, stirring until smooth. Gradually add broth, milk and pimiento, stirring constantly until sauce is thickened. Add chicken and noodles.

  4. Pour into prepared casserole dish. Sprinkle Parmesan cheese over top.

  5. Bake 25 to 30 minutes.
