Ingredients
- 6 or 7 Idaho potatoes, peeled and sliced into 1/8 inch thick French fry strips, soaked in cold water
- 4 Tbsp (1/4 cup) olive oil
- 1 Tbsp dried Italian herbs (oregano, thyme, marjoram, basil)
- 2 cups Romano cheese, grated
- 1/4/ cup parsley, finely chopped
- 4 Tbsp butter (1/2 stick), cut into 6 cubes
- salt and pepper
Directions

eheat oven to 400.

Drain the potatoes and pat dry. Spread 1 Tbsp oil on each of 2 cookie sheets and spread out.

Sprinkle the dried herbs evenly over the potatoes. Liberally spread the cheese and parsley on top. Drizzle the rest of the oil over the cheese. Scatter the butter around the pans.

Bake till golden for 45-50 minutes. Sprinkle with salt and pepper. Serve hot.
