Ingredients
- 1 pound fresh asparagus, trimmed, cut into 2-inch pieces
- 2 tbsp butter, plus extra for the casserole dish
- 1/2 cup flour
- 3/4 tsp sugar
- 1 1/4 cup milk
- 3 large eggs
- 1 tsp chopped fresh thyme
- 3/4 tsp salt
- pinch of fresh ground black pepper
- 1 tbsp lemon zest

eheat 350.

Mix flour, sugar, salt, pepper, thyme, milk with a wisk until flour is absorbed. Add eggs and whisk. Add lemon zest and stir.

Melt butter until bubbly and a little brown, saute asparagus about 1 1/2 minutes until turns a darker green.

Butter oval le creuset dish, pour in vegetables then batter.

Bake 40-45 minutes. Cool until it collapses.
