Ingredients
- 3 eggs, beaten
- 2 cups sugar
- 1-1/2 cups warm mashed potatoes
- 1 cup buttermilk
- 1/3 cup butter, melted
- 6 cups flour
- 4 tsp baking soda
- 1 tsp salt
- 1 tsp nutmeg

Add sugar to eggs; beat well. Stir in potatoes, butter, and buttermilk. Add dry ingredients and mix only until flour is moistened. Chill dough for at least 1 hour.

Roll 1/3 at a time on a floured surface to 1/2 inch. Cut with doughnut cutter. Let rest 15 minutes. Fry in hot grease until brown; put on paper towels and roll in sugar and cinnamon.

Dough can be kept in the refrigerator up to 1 week before frying.
