Ingredients
- 1 1/2 cups corn (fresh, cut from the cob, or frozen)
- 1 cup black beans, canned or cooked, rinsed
- 1 red bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 clove of garlic
- 1 lime (for juice)
- 2 tsp cilantro
- salt, to taste
- pepper, to taste
Directions

Cook corn in small amount of boiling water, 4 minutes, or until corn is crisp-tender. Mix with other ingredients.
