Ingredients
- 4 bell peppers, any color
- 1 pound ground turkey breast
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 roma tomatoes, seeded and chopped or can drained diced tomatoes
- 1/4 cup egg substitute
- 1 tablespoon Worchestershire sauce
- Pinch crushed red pepper flakes, or
- to taste
- Salt and pepper to taste
Directions

Cut off tops of peppers and remove seeds and membranes. Reserve tops. Place peppers in pot of salted boiling water and parboil for 3-4 minutes. Remove and drain.

Chop reserved pepper tops and place in large bowl. Add remaining ingredients and stir to combine.

Slice small pieces off bottoms of peppers if necessary for them to stand upright.

ll peppers with mixture. Place in small, deep baking dish coated with cooking spray. Cover loosely with foil and bake 20 minutes at 350. Remove foil and bake uncovered for 15 minutes, until turkey is cooked through.

If desired, top with salsa or diced canned tomatoes that have been heated and drained.
