Ingredients
- 8 eggs
- 1/3 cup light mayonnaise
- 1 tbsp dijon mustard
- 1 tsp white wine vinegar
- 1 tbsp minced shallots
- 1/4 tsp hot sauce
- salt and pepper
- paprika to garnish
Directions

Boil eggs and set aside

In a medium bowl mix together the mayonnaise, mustard, vinegar, shallots and hot sauce.

Peel eggs and halve lengthwise; remove yolks leaving whites in tact.

Transfer yolks to mayonnaise bowl and season with salt and pepper. Mix with fork until smooth.

Mound yolk mixture into whites. Sprinkle with paprika just before serving or cover with plastic wrap and refrigerate
