Quick Beef Skillet Meal

You can easily leave out the carrot, celery or green pepper if you do not have on hand.

Ingredients

  • 1 T. oil
  • 1 C. onion, chopped
  • 2 cloves garlic, minced
  • 1 small carrot, diced
  • 1 C. chopped celery
  • 1 C. bell pepper, chopped
  • 1 lb. ground beef
  • 1/4 t. salt
  • 1/2 t. black pepper
  • 1/4 t. paprika
  • 1 28oz. diced tomatoes
  • 1 C. frozen peas
  • 1 C. uncooked rice
  • 1 1/2 C. water

Directions

  1. In a skillet, sauté the onion, garlic, carrot, celery and green pepper.

  2. Add the ground beef and brown. Add salt, pepper, paprika, tomatoes, peas, rice and water. Cover and bring mixture to a boil.

  3. Reduce heat to low; simmer for 35 to 40 minutes until rice is done.
