Quick Beef Skillet Meal

You can easily leave out the carrot, celery or green pepper if you do not have on hand.

Ingredients
- 1 T. oil
- 1 C. onion, chopped
- 2 cloves garlic, minced
- 1 small carrot, diced
- 1 C. chopped celery
- 1 C. bell pepper, chopped
- 1 lb. ground beef
- 1/4 t. salt
- 1/2 t. black pepper
- 1/4 t. paprika
- 1 28oz. diced tomatoes
- 1 C. frozen peas
- 1 C. uncooked rice
- 1 1/2 C. water
Directions

In a skillet, sauté the onion, garlic, carrot, celery and green pepper.

Add the ground beef and brown. Add salt, pepper, paprika, tomatoes, peas, rice and water. Cover and bring mixture to a boil.

Reduce heat to low; simmer for 35 to 40 minutes until rice is done.
