Berry muffins

Especially good for diabetics
I’ve tried them with different berries
They freeze well
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients
- 2t baking powder
- 1/2 t baking soda
- 21/2 c flour
- 1/2t salt
- 3/4 c GFS pecan meal
- 1 c plain yoghurt (or same fruited kind)
- 2 eggs
- 1/2 c oil
- 1/2 to 1 c berries
Directions

Mix dry ingredients.

Stir in eggs, yoghurt and oil and stir until blended. Gently fold in berries. Fill in well-greased muffin tins 2/3 full. Bake @ 400 degrees for 15-20 minutes.

Makes 12-16 muffins.
