Ingredients
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 6 tablespoons butter, chopped
- 1/2 cup flour
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 pound white cheddar cheese, grated
- 1/2 pound white American cheese, grated
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 box Barilla Whole Grain Rotini pasta
Directions

In a large pot over medium heat, saute the bell peppers in olive oil until tender, about 5 – 7 minutes.

Add butter. When melted whisk in the flour until it forms a thick paste.

Slowly whisk in the milk and cream.

Allow the sauce to heat for 10 minutes or until it begins to bubble.

Reduce the heat to medium-low and stir in the cheeses, salt and pepper.

Prepare the pasta as directed on the package, strain and stir into the sauce.

Serve immediately.
