Skillet Beef & Broccoli

Quick and easy skillet meal adapted from Campbell’s recipe.

Serves 4 people

Ingredients

  • 1 T. vegetable oil
  • 1 small onion, sliced into rings
  • 1 clove garlic, minced
  • 1 lb. sirloin steak, cut into thin strips
  • 1 can tomato soup
  • 3 T. soy sauce
  • 1 t. vinegar
  • 1/4 t. crushed red pepper (optional)
  • 2 C. fresh or frozen broccoli florets
  • 1 C. white rice, prepared to package directions

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and sauté until tender; add beef and stir-fry until well browned.

  2. Stir the soup, soy sauce, vinegar, garlic powder and red pepper, if desired, in the skillet and heat to a boil. Stir in the broccoli and cook until its tender-crisp. Serve the beef mixture over the rice.
