Skillet Beef & Broccoli

Quick and easy skillet meal adapted from Campbell’s recipe.

Ingredients
- 1 T. vegetable oil
- 1 small onion, sliced into rings
- 1 clove garlic, minced
- 1 lb. sirloin steak, cut into thin strips
- 1 can tomato soup
- 3 T. soy sauce
- 1 t. vinegar
- 1/4 t. crushed red pepper (optional)
- 2 C. fresh or frozen broccoli florets
- 1 C. white rice, prepared to package directions
Directions

Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and sauté until tender; add beef and stir-fry until well browned.

Stir the soup, soy sauce, vinegar, garlic powder and red pepper, if desired, in the skillet and heat to a boil. Stir in the broccoli and cook until its tender-crisp. Serve the beef mixture over the rice.
