Pumpkin Pie Bars

Ingredients

  • 1 1/3 c flour
  • 1/2 c firmly packed brown sugar
  • 3/4 c sugar
  • 3/4 c butter
  • 1 c oats, uncooked
  • 1/2 c chopped pecans
  • 1 pkg (8oz) cream cheese, softened
  • 3 eggs
  • 1 can (15oz) pumpkin
  • 1 T pumpkin pie spice

Directions

  1. eheat oven to 350.

  2. Line 13x 9 inch baking pan with foil. Grease foil lining.

  3. Mix flour, brown sugar and ¼ c of the granulated sugar in medium bowl, cut in butter with pastry blenter or 2 knives until mixture resembles coarse crumbs.

  4. Stir in oats and pecans. Reserve 1 cup of the oat mixture, press remaining mixture onto bottom of pan.

  5. Bake 15 min.

  6. Beat cream cheese, remaining ½ c sugar, eggs, pumpkin and pimpkin pie spice in small bowl with electric mixer on medium speed until well blended.

  7. Pour over crust, sprinkle with reserved crumb mixture.

  8. Bake 25 min. Lift from pan using handles; cool completely. Cut into 24 bars.
