Ingredients
- 1 1/8 cup butter at room temperature
- 1/2 c sugar
- 1/2 c ground almonds
- 1 egg
- 3 cups flour
Directions
-
Preheat oven to 180 degrees C. ( 350 degrees F)
-
Cream the butter and sugar very well.
-
Add egg, ground almonds and flour, working the dough quickly until it comes together.
-
Cover with plastic wrap and chill in the fridge for an hour.
-
Butter the Sandkaker forms and sprinkle with flour.
-
Divide the dough into 4 parts, rolling each into a sausage shape and cutting each one into 12 pieces.
-
Roll each piece into a ball and press into the form. (It should look like a miniature pie base.)
-
Set the forms onto a baking tray and bake in the middle of the oven for 12 to 15 minutes.
-
When they are baked, place them upside down onto a cooling rack. When they are cold they will have slipped out of the forms which can be lifted off.
-
In modern recipe books it is often suggested they are filled with a little pastry cream, whipped cream and/or jam.
