Chicken Supreme

Delicious. Use a 9 by 13 pyrex dish.

Cook time: 45 minutes
Serves 6 people

Ingredients

  • 2 cups diced or shredded chicken
  • 11/2 cups cooked diced celery
  • 1 cup raw rice(cooked)
  • 1 or 2 cans cream of chicken soup
  • 1 can cream of celery soup
  • 4 tablespoons chopped onion
  • 3/4 cup mayonnaise(more if needed)
  • 1 can sliced drained water chestnuts
  • 1/2 to 1 cup slivered almonds
  • salt to taste

Directions

  1. Cook 4-6 boneless chicken breasts(have butcher leave skin on) for 45 min. or until tender. Remove chicken from broth and set aside.

  2. Cook rice and celery in chicken broth. I use 1 cup uncooked rice to 2 cups liquid. If you do not have 2 cups of broth, add enough water to make 2 cups.

  3. Combine all ingredients. Top with buttered breadcrumbs or cracker crumbs if desired. I sprinkle grated cheese on top.

  4. Bake at 350 degrees for about 45 minutes or until bubbly.
