Ingredients
- 1/4 cup vegetable oil
- 2 pounds chicken breasts
- 1/2 cup chicken broth
- Grated rind and juice of one lime
- 2 cloves of garlic, minced
- 1/4 tsp. ground ginger
- 1/2 tsp. rosemary, crumbled
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

Brown chicken in vegetable oil, turning once or twice.

Add broth, lime juice, grated rind, ginger, garlic, rosemary, salt and pepper.

Cover; reduce heat to low and simmer 25 minutes.

Skim fat and serve with pan juices.
