Ingredients

  • 2 cups whole lentils
  • Several garlic cloves
  • 2 onions, one sliced, one chopped
  • 1/4 cup olive oil
  • 1 cup rice
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. cumin

Directions

  1. Boil lentils and garlic in enough water to cover them until almost tender.

  2. Fry sliced onions on low until caramelized.

  3. Add rice, chopped onions, 3 cups hot water and spices to lentils.

  4. Cover and simmer gently until rice is soft and water is absorbed.

  5. Top with caramelized onions

  6. Serve with a lemony salad.
