Uncle David’s Spaghetti and Meatballs

Ingredients

  • Sauce:
  • 2 46 oz. cans of tomato juice
  • 24 oz. tomato paste
  • 1.5 cups red wine
  • 1.5 T. garlic, chopped
  • 1/2 cup sugar
  • 1 T. parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 onion, peeled
  • Meatballs:
  • 5 lbs. lean ground beef
  • 4 eggs
  • 1 T. parsley
  • 2 tsp. chopped garlic
  • 8 oz. Parmesan cheese
  • 1 cup half-and-half
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 cups unseasoned bread crumbs

Directions

  1. Mix all meatball ingredients except for bread crumbs.

  2. Add bread crumbs, bit by bit, until the right consistency is reached.

  3. Make small meatballs, no larger than 1 inch diameter.

  4. Add all sauce ingredients to a large, heavy pot and cook on low. Add meatballs to sauce.

  5. Cook on low all day, never allowing the sauce to reach a boil.

  6. Serve over spaghetti.
