Mashed Cauliflower

This is a good substitute for potatoes if you are on a carb-restricted diet (use light cream cheese if you are.)
Prep time: 15 minutes
Cook time: 20 minutes
Serves 4 people

Ingredients
- 1 head cauliflower, cut into florets
- 4 oz. cream cheese, softened
- 1 garlic clove, minced
- Salt and pepper, to taste
Directions

Cook/steam cauliflower until very soft; drain. Add the cream cheese and garlic and mash until light and fluffy. Add salt and pepper to taste.
