One Dish Chicken & Rice Bake

A quick and easy casserole that’s great paired with a salad. This is a “go to” dinner for me which I compiled from a couple different recipes.

Prep time: 5 minutes
Cook time: 50 minutes
Serves 4 people

Ingredients

  • 1 can cream of mushroom soup
  • 1 1/3 C. water
  • 1/4 C. water chestnuts, chopped
  • 1/2 jar diced pimento
  • 1 small onion, minced
  • 1 garlic clove, minced
  • 1/4 C. mayonnaise
  • 1/2 T. soy sauce
  • 1 C. grated cheddar cheese
  • 3/4 C. uncooked white rice
  • 1/4 t. paprika
  • 1/4 t. salt
  • 1/4 t. ground black pepper
  • 1-1/4 lb. chicken breasts

Directions

  1. Preheat oven to 375°. Spray 2-quart shallow baking dish with cooking spray.

  2. Whisk the soup, water, water chestnuts, pimento, onion, garlic, mayonnaise, soy sauce, rice, paprika, salt and black pepper together in a bowl. Pour rice mixture into prepared baking dish. Place the chicken breasts on top of the rice; season chicken with additional paprika and pepper. Cover with foil.

  3. Bake for 30 minutes; remove foil and stir rice. Continue baking for another 20-25 minutes until the chicken is cooked through and the rice is tender.
