One Dish Chicken & Rice Bake

A quick and easy casserole that’s great paired with a salad. This is a “go to” dinner for me which I compiled from a couple different recipes.

Cook time: 50 minutes
Serves 4 people

Ingredients
- 1 can cream of mushroom soup
- 1 1/3 C. water
- 1/4 C. water chestnuts, chopped
- 1/2 jar diced pimento
- 1 small onion, minced
- 1 garlic clove, minced
- 1/4 C. mayonnaise
- 1/2 T. soy sauce
- 1 C. grated cheddar cheese
- 3/4 C. uncooked white rice
- 1/4 t. paprika
- 1/4 t. salt
- 1/4 t. ground black pepper
- 1-1/4 lb. chicken breasts

Preheat oven to 375°. Spray 2-quart shallow baking dish with cooking spray.

Whisk the soup, water, water chestnuts, pimento, onion, garlic, mayonnaise, soy sauce, rice, paprika, salt and black pepper together in a bowl. Pour rice mixture into prepared baking dish. Place the chicken breasts on top of the rice; season chicken with additional paprika and pepper. Cover with foil.

Bake for 30 minutes; remove foil and stir rice. Continue baking for another 20-25 minutes until the chicken is cooked through and the rice is tender.
