Ground Beef and Noodle Casserole

Good casserole…adding the cottage cheese helps make it creamy.

Cook time: 45 minutes
Serves 6 people

Ingredients
- 8 oz. egg noodles
- 1 T. oil
- 4 oz. mushrooms, sliced
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 lb. ground beef
- 1 t. salt
- 1/4 t. pepper
- 1 can diced tomatoes
- 8 oz. tomato sauce
- 1 C. creamed cottage cheese
- 1 C. sour cream
- 1/2 C. green onions
- 1 C. grated sharp cheese
Directions

eheat oven to 350. Spray casserole dish with cooking spray.

Cook noodles according to directions; drain.

Sauté mushrooms, onion and garlic in oil; add meat and brown. Add salt, pepper, diced tomatoes and tomato sauce. Simmer about 10 minutes.

In a large bowl, combine noodles, cottage cheese, sour cream and green onions. Add beef mixture and mix well. Pour into prepared baking dish; top with grated cheese. Bake at 350 degrees for 30 minutes.
