Coconut thumbprint cookies

Ingredients

  • 3 sticks butter
  • 1 cup sugar
  • 1 1/2 tsp. vanilla
  • 3 1/2 c. flour
  • 2 eggs, lightly beaten
  • 12 ounces sweetened, flaked coconut
  • 12 ounces caramels
  • 6 T. heavy cream
  • sea salt

Directions

  1. at oven to 350. Beat together butter and sugar until pale and fluffy, then add vanilla.

  2. Gradually add flour and 1/2 tsp. salt. Press dough together in plastic wrap, then roll into little balls.

  3. Dip each ball in beaten egg, then roll in coconut. Place on cookie sheet and make a thumbprint. Bake for 10 minutes.

  4. Remove cookies and re-press indentations, then back for 9-10 minutes more.

  5. Place caramels and heavy cream in a saucepan and melt over low heat. Spoon into indentations and sprinkle with salt.
