Ingredients
- 3 sticks butter
- 1 cup sugar
- 1 1/2 tsp. vanilla
- 3 1/2 c. flour
- 2 eggs, lightly beaten
- 12 ounces sweetened, flaked coconut
- 12 ounces caramels
- 6 T. heavy cream
- sea salt
Directions

at oven to 350. Beat together butter and sugar until pale and fluffy, then add vanilla.

Gradually add flour and 1/2 tsp. salt. Press dough together in plastic wrap, then roll into little balls.

Dip each ball in beaten egg, then roll in coconut. Place on cookie sheet and make a thumbprint. Bake for 10 minutes.

Remove cookies and re-press indentations, then back for 9-10 minutes more.

Place caramels and heavy cream in a saucepan and melt over low heat. Spoon into indentations and sprinkle with salt.
