Tilapia with sauteed spinach

Ingredients
- 1 egg, beaten
- 1/2 c dry bread crumbs, italian
- 3/4 tsp salt, divided
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp moroccan seasoning
- 4 tilapia fillets (6 oz each)
- 4 tbsp EVOO
- 1 small onion, chopped
- 1 garlic clove, minced
- 5 c fresh baby spinach
- 1/8 tsp crushed red pepper
- 1/8 tsp pepper
- 1/4 c chopped walnuts, toasted (optional)
Directions

Place egg in shallow bowl.

In another shallow bowl combine bread crumbs and seasoning.

Dip fillets in egg, then bread crumbs.

In large skillet, cook fillets in 3 tbsp EVOO over medium heat, 4-5 minutes per side until golden brown and fish flakes easily with a fork.

Remove and keep warm.

In same skillet, saute onion in 1 tbsp EVOO until tender.

Add garlic and pepper and cook 1 minute.

Add spinach and pinch of salt.

Cook and stir 3-4 minutes or until spinach is wilted.

Serve with fillets.

Sprinkle with walnuts if desired.
