Roasted Garlic Chicken

Ingredients

  • 1 head garlic
  • 1/2 c red wine vinegar
  • 1/3 c EVOO
  • 2 tbsp fresh oregano
  • 3-4 dried red chili peppers, crushed
  • Kosher salt
  • 4 lb chicken, cut up
  • Pita bread (optional)

Directions

  1. Mince 1 clove garlic; smash the rest.

  2. Combine garlic with vinegar, EVOO, oregano, chiles and 1 tsp salt in large bowl.

  3. Add chicken and toss to coat.

  4. Cover and refridgerate for at least 2 hours or overnight.

  5. eheat oven to 450.

  6. Arrange chicken in a roasting pan.

  7. Roast until cooked through and golden, about 30 minutes.

  8. Garnish with oregano.

  9. Brush pita bread with pan dripping to serve with chicken.
