Crab & Artichoke Quesadillas

Ingredients
- 1/2 c parmesan, grated
- 1/2 c mayo
- 1 can artichokes, chopped
- 4 1/2 tsp roasted red peppers, chopped
- 1 clove garlic, minced
- 6 flour tortillas, 10"
- 1 c cooked crab
- 1/2 c mozzarella, shredded
Directions

In small bowl, combine 1st five ingredients.

Spread over 3 tortillas.

Top with crab and mozzarella other tortillas.

Press down slightly.

On griddle with non-stick spray cook over medium heat for 2 minutes on each side or until cheese is melted.

Cut into 6 wedges.
