Spinach Rice

Ingredients

  • 1 (10 ounce) package frozen chopped spinach , thawed
  • 1 cup cooked rice
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup minced onion
  • 1/4 cup milk , plus
  • 2 tablespoons milk
  • 2 eggs , beaten
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon Worcestershire sauce
  • 1⁄8; teaspoon salt (to taste)
  • 1⁄8; teaspoon pepper (to taste)
  • 1 tablespoon butter or 1 tablespoon margarine

Directions

  1. Drain thawed spinach, and squeeze out excess water (I use kitchen towels for this).

  2. Combine spinach and the remaining ingredients except butter; mix well.

  3. Transfer mixture to a greased 1 quart casserole; dot with butter.

  4. Bake in a preheated 350° oven for 25-30 minutes, until well heated.
