Sally’s Potato Salad

My most requested recipe. This is a double recipe so it can be halved for a smaller group.

Ingredients
- 5-6 large red potatoes
- 2 C. Hellmann's Mayonnaise
- 1/4 C. white vinegar
- 3 t. salt
- 2 t. sugar
- 1/2 t. pepper
- 4 ribs celery, thinly sliced
- 1 large onion, diced
- 5 hard-cooked eggs, chopped

Put potatoes into large saucepot, cover with water; bring to a boil over medium-high heat. Reduce heat and simmer 23-25 minutes or until potatoes are fork-tender. Drain and cool slightly.

In a small bowl, whisk together the Mayonnaise, vinegar, salt, sugar and pepper.

Peel and cube potatoes. In a large bowl, combine potatoes, celery, onion and eggs. Pour dressing over and mix well. Refrigerate for several hours for flavors to blend.
