Helen’s Meatloaf

Ann Landers published this recipe several times over the years. It was her sister Helen’s recipe and it’s very good. I usually cut the recipe in half for two people + leftovers.
I’ve occasionally used barbeque sauce instead of the tomato sauce.

Ingredients

  • 2 pounds ground beef
  • 2 eggs
  • 1-1/2 cups bread crumbs
  • 3/4 cup ketchup
  • 1 t. Accent (optional)
  • 1/2 cup warm water
  • 1 envelope Lipton's onion soup
  • 1 8 oz can tomato sauce
  • 2 strips bacon (optional)

Directions

  1. Preheat oven to 350°.

  2. Mix all ingredients thoroughly, except for tomato sauce and bacon.

  3. Put into loaf pan. Cover with 2 strips bacon. Pour the tomato sauce over all.

  4. Bake 1 to 1-1/2 hours.
