Spicy Grilled Chicken Salad

Ingredients
- 1 8 oz can sliced pineapple
- 3 tbsp veg oil
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp honey
- 1/4 tsp ground ginger
- 1/4 tsp cayenne pepper
- 4 chicken breasts
- 1 tsp pepper
- 5 c torn lettuce
- 1 red pepper, julienned
- 1 small onion, sliced into rings
Directions

Drain pineapples, reserving 2 tbsp juice; set aside.

In jar, combine juice, oil, soy sauce, vinegar, honey, ginger and cayenne.

Shake well.

Brush some dressing over pineapple; set aside.

Sprinkle chicken with pepper.

Grill or broil chicken and cut into strips.

Grill or broil pineapple 2-3 minutes per side.

Assemble salad and drizzle with remaining dressing.
