Sausage, Potato, and Kale Soup

Ingredients

  • 2 kale bunches
  • 12 red potatoes sliced thin
  • 1 onion chopped
  • 1 1/2 pound Italian sausage
  • 1/2 teaspoons red pepper flakes
  • 2 cups chicken broth low sodium
  • 2 cups milk whole
  • 4 cups half and half
  • splash heavy cream
  • oregano
  • black pepper

Directions

  1. Prepare kale wash and tear into bite size

  2. Boil potatoes, drain, and set aside

  3. In lg pot crumble and brown Italian sausage

  4. Drain, stir in red pepper, oregano, chicken broth, milk, and half and half.

  5. Simmer 30 minutes

  6. Add potatoes, splash of heavy cream

  7. Stir in kale

  8. Simmer an additional 10 – 15 minutes

  9. Serve
